Breakfast Casserole

Ingredients
6 eggs
1 green bell pepper
1 onion
8oz cottage cheese
1 lb sage Jimmy Dean sausage
shredded hashbrowns
cheddar cheese
salt & pepper to taste 


Dice green pepper and onion.










Brown sausage. Drain. 









Brown the hashbrowns. Spray the glass casserole dish with Pam and spread hashbrowns across the bottom. Pour cottage cheese evenly across the dish.Sprinkle onion and green peppers on top.
Layer sausage on top of the hashbrowns, onion and green peppers. Whisk 6 eggs together. Pour eggs evenly over casserole.
Sprinkle cheddar cheese to taste on top of casserole. Bake at 400 degrees for about 25 minutes, or until cheese is melted and casserole is firm.

And finally, dig in!
